i've been obsessed with kale lately but i was weary of the kale salad. it just seemed too harsh raw, so the trick is to lightly roast the kale before creating the salad. it's just better all around: color, taste, texture. give it i try.
i loosely followed this recipe (skipped the tempeh) but it was amazing.
